Jon and I weren't feeling the pancakes today, however, so I whipped up a few spinach omelets for us.
Both of our spinach omelets were stuffed with fresh salsa and freshly shredded pepper Jack cheese, but I also crumbled up one of my breakfast patties to put in mine. This was a very SPICY breakfast! The patties really have quite a kick to them...Kick Start, indeed! We both agreed these would be great on a breakfast sandwich. (Just thinking ahead...)
Once again, we headed over to the park...
I decided to sneak away from the mayhem for a little bit to relax and read...
So nice to be out in nature, reading, drinking some coffee, and enjoying the day. From my seat, I can still check out the playground goings-on...
But, that also means I can be spotted, too...
We headed home and I made up a small snack for Jon and the boys.
For Jon:
Chopped green and red bell pepper, red onion, chives, and minced garlic plus 4 oz cream cheese |
Veggie cream cheese spread |
Whole wheat English muffin with a schmear |
Tasty treat and good coffee! |
For the boys:
(DYLAN) Whole wheat pretzel sticks and Sliced banana |
(AIDAN) Sliced red pear and French vanilla & almond granola |
Sunday also repeated Saturday's lounging around agenda with some more errands thrown in for good measure. Even dinner was a repeat...a delicious array of leftovers. But there was no complaining; everything was just as delicious as it was the first time around!
We did mix it up by making a nice Sunday night dessert...homemade peanut butter cookies. These cookies are rich and delicious and have only 3 ingredients!
1 cup peanut butter (creamy or crunchy), 1 cup sugar (I prefer brown sugar), and 1 egg |
Mix all ingredients together |
until nice and smooth |
Place dough in 1 Tbsp balls on parchment-lined baking sheets; press dough with fork in criss-cross pattern |
Bake at 350ºF for 10 min (or until edges get a little crispy) |
Excellent dunked in milk! |
This dessert is one of our favorite fallback treats to make when we want something sweet, but don't want to go to a lot of effort. We always have the ingredients on hand, so that makes it easier. Our kids are peanut butter cookie junkies!
